EGG: Bacon & Egg Pie

  • 10 pieces preservative free bacon
  • 12 eggs
  • 1 T whole grain mustard seed
  • 1 T garlic minced
  • Herbs- Fresh or dried to taste
  • Salt and pepper to taste
  • 3 spring onions chopped
  • 2 cups baby spinach leaves
  • 1 zucchini grated
  • 1 12 cups cheese grated
  • 2 ripe tomatoes sliced


  1. Preheat the oven to 180C.
  2. Grease an oven proof dish.
  3. Get the bacon slices and place them around the inside of the baking dish evenly and the base.
  4. In a large mixing bowl mix together the rest of the ingredients minus the tomatoes slices.
  5. Pour the egg mixture into the middle of the baking dish and place the tomato slices evenly on top. Cook in the oven.
  6. Check the dish after 25 minutes and check every 5 minutes until it is cooked to a golden brown and cooked through.
  7. Remove from the oven, slice, serve and enjoy!
